Cucumber Salad

Hello August!!! Where has summer gone?  The boys go back to school in less than a month and while Fall is one of my favorite seasons,  I also love the lazy days of summer and garden fresh vegetables especially cucumbers. The cucumber salad I’m sharing with you today is quick, simple and perfect for summer. If you have an overabundance of garden fresh cucumbers this time of year this is a perfect way to use them up. 

I have been eating this cucumber salad since childhood, my mom always used to make it when it was really hot or for BBQ’s. It goes together quickly and is ready to eat by the time your done cooking the rest of your meal.

It calls for a few simple ingredients.

Whisk them all together.

Toss in the cucumbers….

Refrigerate at least 30-40mins and serve.

Cucumber Salad

From Mrs. JMM’s Recipe Box

Ingredients

2-3 Cucumbers

1/4 cup White Vinegar

2 Tbs. Sugar

1/4 cup of Mayo

1/2 tsp Pepper

Salt to taste

Directions

Peel and slice cucumbers.

Whisk together the rest of the ingredients and add cucumbers.

Toss to coat.

Chill for 30-40 mins and Serve.

This salad is a perfect side dish for these BBQ Chicken Burgers or this Flank Steak.
