One of my favorite things about Maine summers are the blueberries, they’re small and really sweet. They have a taste like you can’t get in a grocery store blueberry. Every year I order a case of frozen organic blueberries from a local farm here and I use them throughout the year., One of my favorite things to make is this Blueberry Crisp.

1 1/2 cups of flour
1 1/2 cups cooking oats
1 1/2 cups brown sugar
2 teaspoons cinnamon
1 stick +4 tablespoons cold butter cut up
pinch of salt
4 Cups Fresh or Frozen Blueberries
1/2 cup granulated sugar
1/4 cup flour
Preheat Oven to 350 and lightly grease a 13×9 baking dish
To make topping put flour, oats, brown sugar, cinnamon,salt and cut up butter in a medium size bowl. Use a pastry cutter or your fingers to mix in the butter to create small pea size crumbs. Set Aside
In a large bowl toss blueberries with flour and sugar and pour into 13×9 pan
Sprinkle the crumb topping over the blueberries until evenly distributed.
Bake for 30-35 mins, the blueberries will be bubbly and the crust golden brown.
Let set on a cooling rack for 20 mins and serve warm with vanilla ice cream or homemade whipping cream.
