Happy First Official Day of Fall!!!
In honor of this wonderful day, I’m sharing one of my many favorite Fall recipes!!
I love to make this as a side dish with dinner, it’s so delicious and the squash cooks up so tender with the caramelized apples in the center it’s a perfect combination. If you love squash you seriously need to try this recipe.
I make one squash for the four of us but if you need more then that the recipe doubles easily.
1 acorn squash
1 teaspoon of cinnamon
2 tablespoons of brown sugar
2 Tablespoons Butter (give or take, I just add a little to the top before baking to keep it from drying out.)
Salt to taste
Preheat oven to 375
Cut your acorn squash in half and remove the seeds.
Peel and chop the apples.
Toss chopped apple with cinnamon and brown sugar.
Divide evenly between the squash halves.
Top with a pad of butter.
Bake for 50-60 mins or until squash is fork tender. I used a large squash, if you use a small one cut back time to 40 mins and check with a fork too see if it’s tender. When you can easily pierce the flesh with a fork it’s ready.
