Easy Summer Recipe: Cucumber & Pineapple Salad

Hey guys!!

I can’t believe it’s August already! This summer has just flown by but that also means the gardens are producing lots of fresh veggies! This year our cucumbers have done exceptionally well and we have a lot of them.

I’ve been looking for new and creative ways to add them to a meal and this quick and easy salad recipe is on repeat in our house!

This recipe was inspired by some leftover pineapple and half a lime in my fridge sitting next to a bin of fresh cucumbers.

I only used half the pineapple and one large cucumber and it made a nice amount for a family of four.

My oldest who hates everything loves this salad and thats saying something! It always makes me feel good when my pickiest eater approves of a new recipe.


Cucumber Pineapple Salad

Half of a fresh cut pineapple into chunks (you can also used canned pineapple chunks if you already have those on hand but fresh is definitely better)

Fresh cucumber quartered and sliced

Juice of a fresh lime

Mix everything together let sit for 15-20mins at room temperature and serve.

Super simple and healthy and this would be a great salad to bring along to a summer bbq too!
