Quick & Easy Dinner Recipe: Maple Mustard Chicken Bites

Hey Guys!

I wanted to share this easy dinner recipe with you, it’s quickly become a favorite in our house and is perfect for nights when I don’t have a lot of time. The maple mustard sauce gives a sweet spicy flavor to the chicken and pairs wonderfully with rice but is amazing by itself as well.

I found the original recipe on FoodNetwork.com and it was for chicken thighs, which no one is really a fan of in our house. I switched out the thighs for chicken breast pieces and you can also use the chicken tenders if you have those on hand. I changed up some other ingredients as well, like switching out the minced garlic for garlic powder to save time.

Maple Mustard Chicken Bites

Adapted From FoodNetwork.com

Ingredients:

4 boneless skinless chicken breasts, cut into one inch pieces

2 tbs avocado oil for pan for cooking chicken

2/3 cup dijon mustard

2/3 cup real maple syrup

2 tbs apple cider vinegar

1 tsp garlic powder

salt and pepper to taste

Directions:

Mix together in a small bowl the dijon mustard, maple syrup, apple cider vinegar, garlic powder and salt and pepper. Set aside.

Heat oil on medium in a large frying pan.

Add chicken and cook through, about 10mins.

Pour Mustard sauce over the chicken and bring to a boil while stirring.

Reduce the heat to low cover and let simmer for 2-3 minutes.

Sauce will begin to thicken and coat the chicken.

Serve by itself or over rice.
