Did you know October 26th is National Pumpkin Day? To celebrate we had pumpkin spice waffles over the weekend, this is one of my favorite breakfasts to enjoy on a cold weekend morning. The pumpkin pie spice and cinnamon add such a wonderful flavor to these waffles and they’re really easy to make.
I started with a basic buttermilk waffle recipe, changed a few things and added a few extras to come up with this delicious fall breakfast treat.
Add some real maple syrup and it’s pumpkin heaven in the shape of a waffle.
Pumpkin Spice Waffles
2 large eggs
1 3/4 cups buttermilk
1/2 cup avocado oil (you can also use canola or vegetable oil)
1 cup pumpkin puree (not pumpkin pie filling)
2 teaspoons vanilla extract
2 cups all-purpose flour
2 tablespoons brown sugar
1 heaping teaspoon cinnamon
1 heaping teaspoon pumpkin pie spice
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
In a medium sized bowl combine, flour, sugar, cinnamon, pumpkin pie spice, baking powder, soda and salt.
In a medium-sized bowl or large measuring cup, beat together the eggs, buttermilk, oil, pumpkin, and vanilla.
Add the wet ingredients to the dry ingredients and stir just until combined. Some small lumps are ok.
Preheat Waffle Iron
Spray your waffle iron with a non-stick cooking spray.
Cook waffles according to the manufacturer’s directions on your waffle iron.
Keep warm in oven while making the rest of the waffles for breakfast.
Serve with warm maple syrup.
