As the days get shorter and the weather turns colder I find myself wanting all my favorite comfort foods especially chicken noodle soup.
This recipe is super easy and can be made with homemade or store bought chicken stock and takes about 30mins to make plus a few minutes for prep. While I prefer homemade stock, I’ve made this recipe numerous times with my favorite boxed broth making it a quick throw together meal when you need some homemade comfort food in a rush.
A couple boxes of your favorite broth and a rotisserie chicken from the grocery store and this recipe just got even easier.
This soup is full of flavor and perfect with some crusty Italian bread or warm corn bread, I love to make huge batches of this soup for lunches or to freeze for a quick dinner later.
Chicken Noodle Soup
1 tablespoon olive oil
1-2 carrots sliced
2 cups cut up cooked chicken breast meat
1 tablespoon dried basil
salt and pepper to taste
8 cups chicken broth (store bought or homemade)
Saute’ carrots in olive oil on medium heat for 2-3mins
Stir in chicken and basil.
Add broth, bring to a boil and reduce heat to low. Simmer 15 mins.
Add egg noodles, stir a few times to make sure noodles don’t stick together, cover and turn off heat. Let sit for 15mins.
Serve with your favorite bread, crackers and this corn bread is amazing with this soup.
