I’m all about quick and healthy dinners this time of year and this fun Egg Roll in a Bowl stir fry was a perfect addition to the menu.
This dish is so versatile you can use ground beef, chicken, pork or turkey. A lot of the ones I saw used ground beef but honestly I think the pork reminds me more of an egg roll you would get from a Chinese restaurant minus the deep fried shell and unhealthy grease.
After seeing the many versions of this recipe on Pinterest but not finding one I really loved I took the things I liked from different recipes and added my own additions to it to create my own version.
My family loved it and requested I definitely make it again, I love when recipes work out like that. I was already looking forward to leftovers for lunch the next day after dinner because this simple dish was that good! I served ours with a side of brown rice but it’s perfect all by itself for an easy low carb option too.

Here is my version of Egg Roll in A Bowl
Egg Roll in a Bowl Stir Fry
2lbs ground Pork
1 pkg coleslaw Mix
3 green onions (green parts only) sliced
2 garlic cloves minced
1 tbsp avocado oil
4 tbsps soy sauce
2 tbsps avocado oil
1 tbsp brown sugar
A sprinkle of crushed red pepper flakes (add more if you like more spice)
In a small bowl mix together soy sauce, avocado oil, brown sugar and red pepper flakes and set aside.
Heat a large frying pan over medium high heat with 1 tbsp avocado oil. Add ground pork, minced garlic, salt and pepper, cooked until browned and cooked through.
Turn off heat and drain off excess grease. I always remove mine with a slotted spoon onto a plate covered with paper towels and pour the grease into a heat safe container to throw out later after it’s cooled. Be careful it’s hot!!
Add meat back into pan and turn heat to medium.
Add shredded cabbage and mix well with ground pork, let cook until the cabbage softens and wilts down. Stirring occasionally. Its takes about 8mins for the cabbage to cook down perfectly.
Once the cabbage has cooked down add the sauce you set aside earlier and the green onions.
**Quick Tip: if you don’t have green onions a 1/2 tspn of onion powder added here will work in place of the green onions)
Stir to mix the sauce in well and cook for two more minutes, stirring regularly.
Serve by itself or with rice.
